Start with dicing the veggies (green peppers, onions, and tomatoes) and shrimp. Shred the cheese and set it aside.
Preheat the cooking pan and add half of the butter and olive oil. Once the butter melts, sauté onion and green pepper for 5-10 minutes. Stir them occasionally.After 10 minutes, add diced tomatoes and shrimp. Then, season with oregano and salt. Stir-fry these ingredients until there is no water left in the pan. Place all tortillas on the table and add 2-3 tablespoons of the shrimp mixture on one half of the tortilla. Next, sprinkle the shredded cheese on top of the mixture.
Preheat your pan and add the remaining butter. Place one tortilla in and lower the temperature by half. After cooking for 1 minute, fold the tortilla in half. Cook for 10 – 15 seconds more and take it out. Repeat the process with other tortillas.Serve the tacos gobernador with some sriracha sauce and tomato slices. Enjoy!
