Ingredients

  • 14.5 ounces black bean, drained and rinsed (1 can)
  • 14.5 ounces kidney bean, drained and rinsed (1 can)
  • 14.5 ounces white bean, drained and rinsed (1 can)
  • 29 ounces tomatoes (2 cans)
  • 14.5 ounces corn kernels, drained and rinsed (1 can)
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • 1.5 cups vegetable stock
  • 0.5 cups diced onion
  • 4 garlic cloves, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon coriander powder
  • 0.5 teaspoon chipotle powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 0.25 cups sour cream to garnish

Instructions 

  • Add all your spices to a small bowl; cumin, paprika, coriander, chipotle, and chili powder.
  • Set your slow cooker on a kitchen countertop. Add all the ingredients for your three bean chili, including spices, to the slow cooker.
  • Mix everything together.
  • Place the lid on top, turn on the slow cooker, and cook on high for 4 hours or low for 8 hours.
  • Serve in a bowl with a small spoonful of sour cream and a sprinkle of chili powder.
