Soak the black beans in water for one hour. Cut tomatoes, pepper, onion, carrot, and parsley into forms that you want and add them to the slow cooker.
Rinse beans and combine with other ingredients (except oil, lime, and avocado) in the slow cooker. Cover with water and cook on low for 7-8 hours or until tender. Optionally, mash a few spoonfuls of beans for creaminess. Stir in olive oil before serving. Garnish with lime, avocado, bread, and parsley.
