Ingredients

For the soup

  • 2 cups black beans
  • 2 tomatoes
  • 1 green/yellow pepper
  • 1 carrot
  • 1 onion (optional)
  • Handful of parsley
  • 1 teaspoon of salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon garlic powder or granules (or 2 cloves of garlic)
  • 6 cups of water
  • 2 tablespoons olive oil

Adding

  • 2 tbs milk cream or coconut cream
  • 0.5 lime
  • 0.5 lemon
  • 1 avocado
  • Sourdough bread

Additional spices

  • Chilly pepper
  • Mint

Instructions 

  • Soak the black beans in water for one hour. Cut tomatoes, pepper, onion, carrot, and parsley into forms that you want and add them to the slow cooker.
  • Rinse beans and combine with other ingredients (except oil, lime, and avocado) in the slow cooker. Cover with water and cook on low for 7-8 hours or until tender.
    Optionally, mash a few spoonfuls of beans for creaminess. Stir in olive oil before serving. Garnish with lime, avocado, bread, and parsley.
