Ingredients

  • 3 eggs
  • 1 tablespoon olive oil
  • 1 cup Greek yogurt
  • 1 handful of baby spinach
  • 6 cherry tomatoes
  • 6 green olives
  • 1 green pepper
  • 5 pickles optional
  • Salt just a pinch

Instructions 

  • Add the eggs, Greek yogurt, and a little olive oil into a deep bowl. Take the whisker or your fork and start to scramble the eggs. Continue for 1-2 minutes, then add little spinach and salt. Mix them together.
  • Preheat the cooking pan with 1 tablespoon of olive oil for 2-3 minutes on max heat. Add the eggs and lower the heat on 2/3. Cover the omelette with a pan lid, and let it be cooked for 4-5 minutes.
  • Open the lid and turn off the heat. Bring the omelette onto a plate. Add cherry tomatoes, green peppers, and olives for decoration. Fold the omelette in half and serve it in a dish. Enjoy!
