Ingredients

  • 1 cup Bisquick baking mix
  • 3.5 ounces chopped ham
  • 5 ounces Cheddar cheese, shredded
  • 2 cups milk
  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1 small yellow onion, chopped
  • 3.5 ounces broccoli, chopped
  • 3.5 ounces bell peppers, chopped
  • Salt and black pepper to taste
  • Garnish: green onions and parsley

Instructions 

  • Saute the onions and ham in olive oil over medium-high heat for 5 - 7 minutes.
    In the meantime, reheat the oven to a medium temperature (350°F).
  • Beat the eggs and milk well with a whisk.
  • Whisk the Bisquick baking mix, the egg mixture, salt, and ground black pepper thoroughly together.
  • Add the vegetables, sauteed ham, caramelized onions, and two-thirds of the Cheddar cheese to the bowl. Use a silicone spatula to mix everything thoroughly.
  • Brush the casserole pan with olive oil before pouring the quiche mixture into it. Top with the remaining Cheddar cheese. Bake the quiche for about 40 minutes in the oven.
  • Let the quiche cool for about 10 minutes. Sprinkle it with green onions and parsley before serving.

  • The total cooking time is for preparing 4 servings.
  • You can spray the casserole pan with cooking spray instead of using olive oil.
  • If you use frozen veggies, drain them well. Meanwhile, watery veggies should be cooked lightly before being mixed with the other ingredients.
